Gooey Chia and Almond Pulp Pancakes

I am an experimental cook, I hardly every use recipes and I strive to finde new tastes and textures all the time. These pancakes are my latest discovery, enjoy!

You are looking for a healthy pancake recipe without eggs and sugar? Here it is: vegan, sweet and very filling. I have to admit, it was a crazy idea to just jump into the cold water and make pancakes with chia seeds, without researching recipes. But they were sitting in the fridge, waiting to be used in a new creation.

These pancakes make a perfect breakfast or afternoon snack. I have to warn you though, they require some flipping skills.

For 5 pancakes I have used the following ingredients:

1 banana
almond pulp from 200g of almonds (or almond meal)
2 tablespoon of all purpose flour
1/2 teaspoon of baking soda
1 teaspoon of Honey
100 ml of any kind of nut or soy milk
1/2 cup of soaked chia seeds
a dash of salt
a dash of cinnamon
some coconut oil for the pan
fruit as topping
1 cup of coconut yoghurt (I used this one)


Make 1 liter of almond milk to get almond pulp, or use 1 cup of almond meal. Soak your chia seeds for at least 4 hours, better over night.

First mix the almond pulp with the chia seeds, then add the flour, the baking soda, honey and milk. Stir it until it becomes a gooey dough, then add cinnamon and salt.

Heat a pan with some coconut oil and put in two big spoonful of dough. Press the mass flat and shape the corners to make the pancake look round. Be careful not to overcook them, they are not supposed to be crisp or turn dark. Wait until each side takes on a light brown color, then the pancake is ready. Flipping these can be tricky, but they should not break. However, you might have to reshape them a bit after flipping.


Two pancakes are ready

Put them on a plate and cover them until you are done with all the pancakes. Meanwhile, prepare some fruit like pineapple, pomegranate and blueberry. Garnish the pancakes with some coconut yoghurt and add the fruit. You can also garnish the creation with some coconut sprinkles.

Tadaa! There you have them, gooey chia seed pancakes. Enjoy them, they are 100% guilt free. And now tell me (cause I need inspiration too ;)), what’s your favorite pancake recipe?
